Ingredients

  • 2 ripe avocados
  • 1 cup milk, dairy or dairy-free
  • 1/2 cup heavy cream or coconut cream
  • 2 to 3 tablespoons honey, maple syrup, or sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice, optional
  • Pinch of salt

Optional mix-ins:

  • Chocolate chips
  • Crushed cookies
  • Shredded coconut
  • Chopped nuts
  • Cocoa nibs
  • Caramel drizzle
  • Mint pieces
  • Lime zest

Instructions

  1. Prepare the avocados.
Cut the avocados in half, remove the pits, and scoop the flesh into a blender. Make sure the avocados are ripe so the texture will be smooth and the flavor mild.
  2. Blend the base.
Add the milk, heavy cream or coconut cream, honey or maple syrup, vanilla extract, lime juice if using, and a pinch of salt. Blend until the mixture is completely smooth and creamy. Scrape down the sides of the blender if needed and blend again to remove any remaining bits of avocado.
  3. Taste and adjust.
Taste the mixture before freezing. Add more sweetener if you want it sweeter, more lime juice if you want a brighter flavor, or a little more vanilla for a stronger dessert-style taste. The base should taste slightly sweeter than you want the final ice cream to taste because freezing dulls sweetness.
  4. Transfer to the pint.
Pour the blended mixture into the Ninja Creami pint container. Make sure it stays below the MAX FILL line. If you want to add mix-ins later, leave a little room near the top.
  5. Freeze completely.
Place the lid on the pint and freeze it upright for at least 24 hours. For the best result, freeze it on a flat surface so it sets evenly from top to bottom.
  6. Spin in the Ninja Creami.
Remove the pint from the freezer and place it into the outer bowl assembly. Attach the lid and process it using the Lite Ice Cream or Ice Cream setting, depending on how rich and dense you want the final texture.
  7. Check the texture.
After the first spin, the mixture may look crumbly or slightly dry. This is normal. Use a spoon to check the center and sides before deciding whether it needs more liquid.
  8. Re-spin if needed.
If the texture is not creamy enough, add 1 to 2 tablespoons of milk and run the Re-spin cycle. Repeat once more if needed until the ice cream becomes smooth and scoopable.
  9. Add mix-ins.
If you want extra texture, make a small well in the center of the ice cream, add your mix-ins, and run the Mix-ins cycle to distribute them evenly.
  10. Serve.
Serve immediately for a soft-serve texture, or freeze for 30 to 60 minutes if you want a firmer scoop.

Recipe Tips

  • Ripe avocados make the smoothest base and the best flavor.
  • Coconut cream gives the dessert a richer, dairy-free finish.
  • Lime juice helps brighten the avocado flavor without making it taste citrusy.
  • Chocolate and mint pair especially well with avocado.
  • If you want a more dessert-like version, add cocoa powder before freezing.
